"Suino Nero dei Nebrodi"
“Suino nero” is a small size pork with a dark coat very similar to that of the wild boar. It lives in the woods of Nebrodi and it is bred in semi-wild state in large areas used as pastures. This animal is very similar to the wild boar also for its habits. Its rate meat is a precious wealth for the local economy and for the gastronomic pleasure. It can be tasted either fresh or in the form of salami, hams, capocollo and bacon. Every year a lot of feasts dedicated to “Suino Nero dei Nebrodi” are organized in the villages of Cesarò, Manice and Longi

Nebrodi cuisine has an ancient folk culture and it’s simple but also rich of flavours.The most notable foodstuffs are the dairy products such as the tasty “pecorino”, “provola” the delicate ricotta cheese and many others that are still made by the expert hands of shepherds.The cured meats obtained from the Nebrodi black swine are famous; but important are also the production of oil and honey, hazelnuts, chestnuts and berries. The preserves of mushrooms, tomatoes, aubergines, and artichokes are really tasty. Local confectionery (“ramette”, “fiammelle”, almond-paste pastries, “chiacchiere”, “pignolata”, milk biscuits etc.) is appreciated as well.
