Little bowl of potatoes and porcini served with:

- coppa (cured neck of the pork)

First Course
- Tagliatelle with porcinii
- Ravioli with cheese and walnuts in truffle sauce

Second Course:
- Barbecued, in breadcrumbs or with mushrooms black swine cutlet.

BLACK SWINE BASED MENU'

Black swine carpaccio (row meat) fillet and slivers of parmesan with:
- roasted lard
- black swine in aspic
- Salami
- Dry sausage
- Capicollo
- Roasted mushrooms
- Mushrooms in oil
- Provola
- Parmesan

First Course:
- Maccheroni con ragù di sutta e supra di suino nero
- beef, speck (a kind of smoked ham) and chicory tortelli (sort of ravioli)

Second Course:
- mixed pork roast (sausage, roulade, cutlet)
